Rice Pudding Recipe
Ingredients:1 cup sugar2 cups of cooked long grain white rice4 teaspoons butter1 teaspoon vanilla extract3 beaten eggs3-1/2 cups milk1 pinch salt2 tablespoons brandy (optional)Preheat oven to 350 degrees.Method:Mix the sugar, eggs and salt in a small bowl until it is a nice and smooth mixture. Set aside.At medium heat in a saucepan, add in the rice, milk and butter. Stir for 5 minutes. Do not overboil. Incorporate the egg mixture with the optional brandy and stir well until the mixture thickens.Transfer the warm pudding into a baking pan. Place this pan inside another larger pan that has about 1 inch of water. Bake the pudding for approximately 1 hour. Take the pan out of the oven and out of the larger pan and allow everything to cool for a few minutes.
