Pumpkin Cheesecake - Christmas Cake Recipes


Ingredients:

* 3/4 cup graham cracker crumbs
* 1/2 cup ground pecans
* 2 tablespoons white sugar
* 2 tablespoons brown sugar
* 1/4 cup butter
* 3/4 cup white sugar
* 3/4 cup canned pumpkin

* 1 1/2 teaspoons ground cinnamon
* 1/2 teaspoon ground mace
* 1/2 teaspoon ground ginger
* 1/4 teaspoon salt
* 3 (8 ounce) packages cream cheese
* 3/8 cup white sugar
* 1 egg
* 1 egg yolk
* 2 tablespoons heavy whipping cream
* 1 tablespoon cornstarch
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon lemon extract

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Combine the graham cracker crumbs, ground pecans, 2 tablespoons white sugar, 2 tablespoons brown sugar, and the melted butter or margarine and mix well. Firmly press mixture into one 9 inch springform pan.

3. Combine 3/4 cup of the white sugar, the pumpkin, 3 egg yolks, ground cinnamon, ground mace, ground ginger and salt in a medium bowl. Mix well, and set aside.

4. Beat cream cheese with an electric mixer until light and fluffy; gradually add 1/4 cup plus 2 tablespoons white sugar and mix well. Add the whole egg, remaining egg yolk and the whipping cream, beating well. Add cornstarch and vanilla and lemon flavorings, beat batter until smooth. Add pumpkin mixture and mix well. Pour batter into the prepared pan.

5. Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes. Do not overbake. Center may be soft but it will firm up when chilled. Let cheesecake cool on a wire rack, then refrigerate.

Boiled Fruitcake - Christmas Cake Recipes


Ingredients:

* 2 cups chopped dried mixed fruit
* 1 cup roughly chopped glace cherries
* 1/4 cup candied mixed citrus peel
* 1/2 cup chopped walnuts

* 1 1/2 cups white sugar
* 3/4 cup butter
* 1 cup milk
* 1 teaspoon mixed spice
* 1/2 teaspoon baking soda
* 2 2/3 cups sifted self-rising flour
* 2 eggs

Method:

1. Preheat oven to 325 degrees F (160 degrees C). Line one 8x3 inch round cake tin with parchment paper.

2. In a medium saucepan, combine mixed fruit, cherries, citrus peel, walnuts, sugar, butter, milk, mixed spice, and baking soda. Bring to a boil, and simmer for 5 minutes. Let the mixture cool to room temperature.

3.Stir in flour and eggs. Pour into the prepared pan. Wrap outside of pan with brown paper or newspaper.

4. Bake at 325 degrees F (160 degrees C) for 40 minutes, then reduce temperature to 300 degrees F (150 degrees C), and continue to baking cake for 1 1/2 hours. Remove cake from oven, and allow to cool in the tin for 5 minutes, then turn it out onto a cooling rack, remove paper, and cool completely. Cake can be stored for up to 6 months wrapped in foil and in an airtight tin.

White Christmas Cake - Christmas Cake Recipes


Ingredients:

* 1/2 cup water
* 4 ounces white confectioners coating or vanilla chips
* 1 cup butter or margarine, softened
* 2 cups sugar
* 4 eggs, separated

* 1 tablespoon vanilla extract
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 cup buttermilk
* 1 cup flaked coconut
* 1 cup chopped pecans

FROSTING:

* 1 (8 ounce) package cream cheese, softened
* 1/2 cup butter or margarine, softened
* 1 teaspoon vanilla extract
* 3 3/4 cups confectioners' sugar
* 1 tablespoon milk

Method:

1. In a saucepan, bring the water to a boil. Remove from the heat; stir in confectionery coating until melted. Cool for 20 minutes.

Meanwhile, in a mixing bowl, cream butter and sugar.Add egg yolks; mix well. Beat in coating and vanilla.

Combine flour and baking soda; add to creamed mixture alternately with buttermilk.Mix well. Stir in the coconut and pecans.

Beat egg whites until stiff peaks form; fold into the batter. Pour into three greased and floured 8-in. square baking pans.

Bake at 350 degrees F for 25-30 minutes or until cake tests done. Cool in pans 10 minutes; remove to wire rack to cool completely.

2. Combine frosting ingredients in a mixing bowl; beat well. Frost tops of two layers; stack on serving plate with plain layer on top. Frost top and sides of cake

Christmas Chocolate Carrot Cake


Ingrediens:

1 box(18.25 oz) devil’s food cake mix

1 cup shredded carrots(abt 2 carrots)

1 cup chopped walnuts

1 can(16 oz) cream cheese frosting

1 can(16 oz) chocolate frostingwalnuts, orange slices, raspberries, for garnish.

Procedure:

Heat oven to 350 degrees. Prepare cake mix according to packagedirections. Stir in carrots and walnuts. Divide batter evenly amongthree 8″ round cake pans coated with flour based cooking spray.Bake 20min, or until cake tester inserted in center comes out clean. Cool completely. Place 1 cake layer on serving plate; top with 1/2 cupcream cheese frosting. Repeat layering; top with third cake layer.Frost sides and top of cake with remaining cream cheese frosting.In microwave, heat chocolate frosting(lid and foil removed), 30 sec oruntil pourable. Slowly pour over top of cake. Garnish cake withwalnuts, orange slices and raspberries, if desired.

1 c all-purpose flour (I use unbleached) .
3/4 c whole wheat flour .
2 large golden delicious apples, coarsely grated (about 2 c, packed, I used 3 medium apples & peeled them first) .
1/2 c unsweetened applesauce .
1 tsp baking powder .
1/2 c canola oil .
3/4 c sugar .
1/2 tsp salt .
3 large eggs, beaten .
1 tsp pumpkin pie spice or cinnamon .
1/4 c ground flaxseed or wheat germ .
1/3 c butterscotch chips
Directions:
Whisk together flours, sugar, baking soda, baking powder, flaxseed, pumpkin pie spice, & salt In a large-ish bowl.Whisk together eggs, applesauce, & oil in another bowl.Stir in apples until well-mixed.Pour liquid ingredients over dry ingredients & stir just until moistened.Stir in butterscotch chips.Pour batter into a 13x9 pan that has been coated with cooking spray.Smooth with a rubber spatula.Bake in a preheated 350 degree oven about 35 mins, or until the top is golden & a toothpick inserted in the middle comes out clean.(Watch carefully, mine was done at 26 mins).Cool on a wire rack before cutting.
